Introduction

Food is a set of inorganic and organic substances obtained by the human body from the environment and used for nutrition.

The main components of human food are: proteins, fats, carbohydrates, as well as trace elements and vitamins. Proteins and partially fats are plastic substances, they are also used in the body to build new and replace old cells and tissues. They also include some minerals containing phosphorus, calcium, iodine, and iron.

The nutritional value of proteins is determined by their constituent amino acids (there are only 20 of them). Among them, 8 (and for babies 9) are indispensable (these are arginine, valine, isoleucine, leucine, lysine, methionine, threonine, tryptophan, and for babies and histidine).

Carbohydrates (sugars) and fats provide the energy needs of the body. Trace elements, vitamins and a number of other substances are involved in metabolism and carry out catholic and other regulatory functions.

To ensure the normal functioning of the body, a balanced diet is necessary.

Nutrition is rational when food products are sufficient in quantity and their components (essential and non-essential amino acids, polyunsaturated fatty acids, phosphatides, sterols, fats, carbohydrates, vitamins, etc.) are contained in an optimal ratio.

If there is not enough of a component in a person’s food, then a person does not experience a feeling of fullness until this component is received in the required amount. At the same time, other components are consumed in excess, which can lead to obesity and other metabolic disorders.

Main part

The role of macro and micronutrients in nutrition

All chemical elements found in nature can be found in human organs. Table 1 shows the main elements that make up the human body.

Proteins, fats, carbohydrates and compounds containing macronutrients make up the bulk of the human diet. The daily requirement for each is measured in amounts ranging from a few grams to hundreds per day. The first three are energy sources.

The chemical composition of food and water to a certain extent reflects the composition of the environment. In diets based on locally produced food, the lack or excess of mineral food components may be a consequence of the geochemical characteristics of the region. Micronutrient deficiencies can be particularly severe in formula-based diets and liquid nutrient solutions. We have drinking water in the republic with a low content of iodine, and this affects people's health (Impaired thyroid function).

Deficiency of a number of elements in the body can be due to various factors leading to increased decay processes (catabolism): burns, multiple injuries, starvation and a number of diseases, for example, chromium excretion through the kidneys increases with diabetes, with a protein or carbohydrate diet.

The best sources of zinc are beef and fish, as well as well-shelled cereals and legumes when properly cooked. Clinical signs of zinc deficiency in children and adolescents are growth and puberty retardation, rough, dry skin, wounds do not heal for a long time, increased susceptibility to infections, general drowsiness, depression, loose stools. Treatment is carried out by introducing a solution of zinc sulfate or acetate.

The daily intake of copper should be about 2 mg for adults and for children over 4 years of age (see tab. 2). Cereals, legumes, nuts and liver contain the largest amount of copper; tap water is an important source of copper. There is very little copper in cow's milk. Clinical signs of copper deficiency: anemia, osteoporosis (rarefaction of bone tissue), depigmentation of hair and skin, disorders of the central nervous system. The lack of copper in food is successfully corrected by the introduction of 2-4 mg of copper sulfate per day in the form of a 1% solution, which is 0.4-0.6 mg of copper.

For most healthy people, 0.05-0.2 mg per day of chromium in food is sufficient. The best sources of chromium are unrefined grains of cereals, legumes, beef; beer lanes can serve as a source of chromium.

It should be noted that an excess of even vital trace elements in food, due to environmental pollution or an increase in the geochemical background, has a harmful effect on the human body. For example, fatal poisoning caused by food stored in zinc or galvanized utensils. It has been established that this produces zinc chloride and sulfate, and even 1 g of zinc sulfate can cause serious poisoning in humans.

Thus, when determining the need for food, one should take into account their balance not only in terms of well-known organic components, but also in essential microelements. (It is best to store food in glass containers).

Obtaining food raw materials, new additives and artificial food.

New ways of obtaining food raw materials

Chemistry solves and will continue to solve the problem of cooking together with biotechnology. Biotechnology is not such a new branch of knowledge as it seems to many. It has been used by man to make cheese, wine, bread and beer long before the chemical industry, and even before the alchemists.

Today, on average, there is one large domestic animal and one poultry per inhabitant of our planet, which, however, consume 5 times more food (mainly grain) than the person himself.

In the food chain "plants → microbes → humans", humans still cannot do without animals. However, strictly speaking, a person does not need meat dishes, but the proteins that they contain. Microorganisms can also give these proteins to a person. It is not difficult to give them the look and taste of a meat dish today. The new chain “plants → microbes → people” is, of course, economically more profitable.

The rate at which bacteria multiply is also important. If a cow usually gives birth to one calf a year, then some bacteria give offspring every 30 minutes. in 5 hours, 1000 cells are formed from one cell. new cells.

In the modern production of high-quality flour, the most nutritionally valuable parts of the grain - the aleurone layer, shells, germ - go into bran.

The required degree of grinding can be obtained using cryogenic equipment and vibrating equipment. However, these methods are very energy intensive and therefore expensive and inefficient.

So we considered in detail the issues of obtaining protein from bran in order to show how success can be achieved in the food industry using the achievements of other areas of knowledge, in this case, knowledge of the properties of polymeric materials, chemical kinetics, radical chain processes of oxidation of organic compounds.

New Additives

Often, various non-traditional ingredients are added to bread to improve its quality. In Japan, for example, green bread has recently become very popular. This bread is baked from ordinary flour, but when kneading the dough, a powder obtained from seaweed is added to it. Experts believe that bread becomes tastier from this seasoning. This bread is not only tasty, but also healthy. First of all, it is recommended to eat it for hypertensive patients and people suffering from thyroid diseases. Following the Japanese bakers, the British and Americans began to make green bread. In some Asian countries, soy bran is now used as an additive to bread (6-12%) (after a series of operations that improve their quality).

By the way, in Japan you can buy bread and other groceries containing chrysanthemums. The fact is that in Japanese national cuisine, these flowers are a component of many dishes.

Since the main menu of the Japanese is fish and rice, the introduction of flowers, roots and other parts of plants rich in vitamins, trace elements and proteins into the diet is simply necessary.

Let's say a few more words about artificial food.

As mentioned earlier, humanity is experiencing a lack of food. The deficiency of protein, especially animal, is most acutely felt. With a lack of protein, a person does not tolerate a high rhythm of work, is not able to concentrate and make great mental efforts, and the body's resistance to infectious diseases decreases.

With traditional methods of food production, vegetable protein is used irrationally. A very small part of it goes to food, and most of it is converted along the chain of plants → animal → food product. At each stage of such a chain, protein and carbohydrates are lost to a large extent; for example, feed protein is converted to animal protein with a yield of only 6-38%.

Let's take an example to illustrate. In France, artificial meat is produced from vegetable raw materials. The technology for its production is to isolate proteins from soybeans and form fibers from them, from which layers can then be made, similar in structure to meat. After the addition of fats and meat flavor components, these products can be used as substitutes for animal meat in the human diet. Such artificial meat is obtained by extruding soy protein concentrates: they are crushed together with fats and flavors through small holes at high temperatures and pressures. In various countries, a product prepared in this way, which has the taste of smoked brisket, has already gone on sale.

When creating artificial food products, it is very important to match the smell and taste of products.

Production of amino acids and their use to improve the nutritional properties of food and feed.

Even at the end of the XIX century. it was found that amino acids are the main structural elements of protein - an integral part of all living organisms. Currently, there are industrial methods for the production of amino acids not from natural protein, but from other types of raw materials. Individual amino acids can be used to improve the efficiency of food and feed.

Amino acids play a significant role in shaping the taste qualities of natural foods. Already in ancient times, various flavoring agents, spices, were found by man.

In a study6 in dogs, monosodium glutamate has been found to cause an increased secretion of digestive juices. Apparently, the taste sensations caused by glutamate stimulate the gastrointestinal tract. Thus, monosodium glutamate, not being a nutrient in itself, has a physiological effect on the body that promotes the absorption of food.

Vegetable protein is inferior to the animal in terms of the content of essential amino acids, primarily lysine and tryptophan. For example, when rats are fed grain without the addition of essential amino acids, the animals lose weight.

The direct introduction of amino acids into natural feeds in amounts corresponding to physiological needs increases the efficiency of the feed and prevents their overconsumption.

Conclusion

Ways to save food

There are two possible ways to solve the food problem:

The most complete use of food raw materials with the creation of practically waste-free food production;

"Release" of valuable food products used for technical purposes; replacing them with non-food products.

With modern technology for processing agricultural raw materials into food, the amount of waste is very large. For example, in some countries slaughterhouse waste is 50-6% for cattle, 20-30% for pigs, and 30-40% for poultry.

Make full use of food raw materials

A significant problem is the liquid waste of dairy plants, which contain valuable nutritional components. In the production of dairy products in our country, more than 40 million tons of skimmed milk and whey are produced annually, which contain 2 million tons of protein (!). these huge reserves with the current level of technology can be used for food chains. In the most industrialized countries, about 90% of raw whey is converted into food.

You can extract the protein from whey, for example, in the form of sodium caseinate. Using modern ultra-fine membrane filters (ultrafiltration and reverse osmosis), whey can be separated into its two main components: protein and lactose. Whey protein is extremely nutritious, used as a protein component in dietary formulas and added to minced meat in the production of sausages. It is also used in reverse (skimmed milk).

Food spoilage prevention methods.

P The food program provides for not only the production of agricultural products, but also their storage and transportation without loss, food preparation and storage of prepared foodstuffs.

One of the main causes of food spoilage is the oxidative degradation of various organic substances that are food components (primarily fats). That is why scientists in many countries pay great attention to this problem.

Another important cause of food spoilage is the development of colonies of fungi and bacteria, leading to rancidity and souring of food. We will focus on some aspects of this problem in this section.

Inhibition of the process of oxidative spoilage of products.

The problem of inhibiting the processes of oxidative spoilage of products, primarily fats, is one of the main food industries. Oxidation of fats and other organic compounds is a slowly developing chain branched process.

Increasing the shelf life of food products without losing their quality should be solved not only through the widespread use of refrigerators, but also by more active methods, namely, by braking and suppressing oxidative processes with various chemical additives. For this, there are various possibilities associated with the chain mechanism of the processes of oxidation of organic substances, in particular fats.

A dietary antioxidant must have a sufficiently small molecule size to easily penetrate the cell wall of living tissue, have a known solubility for penetration into an aqueous and lipid phrase, and be completely eliminated from the body without accumulating in various human organs.

Of course, absolutely non-toxic antioxidants do not exist. They are non-toxic, but only in certain concentrations. In our country, the closest attention is paid to toxicity problems and the strictest control in these matters is established, which excludes any complications when using antioxidants for food products.
